Texas Home Cooking - Cheddar Chive Biscuits
2 1/4 cups all purpose flour
2 1/2 tsp baking powder
2 tsp sugar
1/2 tsp baking soda
1/2 tsp salt
1/2 cup butter, cold and cubed
1 cup shredded sharp cheese
3 tbsp fresh chives, chopped fine
1 cup butter milk
Preheat oven to 425F.
Combine all dry ingredients together in a bowl. Add butter, and cut in with a pastry blender or fork (I used the old fashioned way and used my hands) until the mixture crumbles.
Add in shredded cheese and chives.
Add in buttermilk and mixture together until the flour is moistened. Do not over mix or your biscuits will not be flaky.
Turn out the dough on to a floured board. Knead it gently (6-8 times) and then press down to about 3/4 inch of thickness.
Cut biscuits with a biscuit cutter or inverted glass and place them on a prepared baking sheet.
Bake for 10-12 minutes until they are golden brown.
Makes 10-12 biscuits.
