Texas Home Cooking - Butter Pecan Muffins

Ingredients

2 cups all purpose flour
3 tsp baking powder
1/2 tsp salt
1 cup chopped pecans
1/2 cup firmly packed brown sugar
1 egg
1 cup milk
1/4 cup melted butter, cooled
1/2 tsp vanilla
Directions

Preheat oven to 400F

Sift together flour, baking powder and salt.

Add in chopped pecans and brown sugar.

In a separate bowl beat 1 egg, add in milk, melted butter and vanilla.  Mix well.

Add wet ingredients to the flour mixture. Combine only until flour is moistened.

Fill prepared muffin tin cups 2/3 of the way full.

Bake for 15 minutes, or until golden brown.

Yield: 10 - 12 muffins
