Texas Home Cooking - Buttermilk Cake with Caramel Frosting
1 cup shortening
2 cups sugar
1 tsp vanilla
1/2 tsp baking soda
2 cups flour
1 cup buttermilk
1/4 cup butter
1/2 cup brown sugar
1/3 cup heavy cream
1 cup confectioner's sugar
Preheat oven to 350F.
Cream together shortening and sugar. Add in eggs and vanilla. Mix til creamy.
Add in remaining ingredients and pour into a well prepared bundt pan.
Bake at 350 for one hour. Allow to cool a bit before inverting cake unto a plate. Allow to cool completely before frosting.
To prepare frosting: Heat butter, brown sugar and cream in a sauce pan, stirring frequently until it comes to a full boil.
Remove from heat, and allow to cool for 10-15 before adding the powdered sugar. Mix well until everything is creamy and lump free.
Pour over top of the cake allowing the frosting to drip down the sides.
