Texas Home Cooking -  Smoked Chicken Tortilla Soup



Ingredients

1 onion, chopped
1 jalapeno, chopped (remove seeds)
3 tbsp olive oil
3 cloves garlic, minced
8 cups chicken broth
1 can kernel corn (drained)
1 can fire roasted diced tomatoes
1 can Rotel (tomaotes with chiles) (mild)
3 tbsp cumin
1 1/2 tbsp chili powder
1 tsp salt
1 tsp Worcestershire sauce
5 cups chopped smoked chicken

Garnishes: tortilla strips, cilantro, avocado slices, queso fresco crumbles



Directions

In a large dutch oven - saute onion and jalapeno in oil, until onions are translucent. Add in garlic, and cook for another minute.

Add in remaining ingredients, except for the chicken. Bring to a boil and then simmer for 30-40 minutes.

Remove soup from the heat, and add in the smoked chicken. Allow to stand for 10 minutes to heat the chicken through. 

​Serve with desired garnishes.
