Texas Home Cooking - White Chicken Chili
2 boneless chicken breasts, cut into cubes
1 orange pepper, diced
1 yellow onion, diced
1 (15 oz) can white kidney beans, rinsed
1 teaspoon freshly ground pepper
1 teaspoon oregano
1 teaspoon ground cumin
1 teaspoon seasoning salt
1 teaspoon cayenne pepper (optional or to taste)
1 chicken bouillon cube, crushed
(water and/or chicken broth)
1 small can chopped green chiles
3 tbsp cream cheese or 1 cup sour cream (optional)
Brown chicken pieces in skillet. Set aside.
Cook pepper and onion pieces until onion is translucent. Add in chicken, once again.
Add seasonings and liquid. Stir to combine.
Add in beans and green
Simmer for 30 minutes.
Add cream cheese or sour cream, if desired, stirring until blended, about 5 minutes before serving.
* if desired you can thicken the chili with a cornstarch slurry
